Spray a cookie sheet with olive oil (if you don't have a sprayer, lightly brush it on)
Take your bunch of kale & rinse it well, shaking off excess water & blotting it on a paper towel.
Break a leaf from the bunch & blot it a little more with the paper towel. Make sure your kale is pretty dry, as it will take longer to bake to make it crispy.
Cut the leafy part from the main stem & break into bite-sized pieces. Discard stems.
Arrange pieces in the oiled cookie sheet. Try not to overcrowd, but you can fit a bunch on there.
Bake for about 10 minutes, or until shrunken & crispy. Don't let them burn!
Let cool a minute & sprinkle with sea salt to taste. Delicious!
